A cheese-forming machine is an industrial piece of equipment that heats, stretches (stretches), and molds masses of pasta filata cheese, giving elasticity, texture, and final shape to the product for pasta filata cheeses, such as mozzarella (including buffalo mozzarella), provolone, scamorza, and caciocavallo.
The cheese mass is heated (usually with hot water or steam). Then, it is stretched and kneaded mechanically. After stretching, the same machine automatically molds the cheese into standardized shapes.
Types of processes:
- Manual / semi-automatic → artisanal cheese dairies.
- Automatic / continuous → industrial production.
- Stretching machine only (without mold) → when molding is done afterward.
