Gizzard Processing Systems
In the poultry processing industry, the Gizzard Harvester (or Gizzard Processor) is an automated unit designed for the extraction, opening, cleaning, and peeling of the gizzard.
Equipment Variations:
Single-Track Processor: Standard unit for low to medium-volume lines (up to 4,000 gph).
Double-Track Processor: High-capacity configuration with parallel processing paths (up to 12,000 gph).
Integrated Defatter: Equipped with specialized peeling rollers or augers to remove mesenteric fat prior to skinning.
Technical Operating Principle:
Transport and Positioning: The gizzard-proventriculus pack is secured by specialized guides.
Splitting and Washing: A high-speed circular blade performs a longitudinal cut (butterfly cut), followed by high-pressure water spray for stomach content removal.
Peeling Action: The opened gizzard passes over counter-rotating peeling rollers (helical rollers). The friction differential strips the inner lining (koilin) from the muscular tissue.
Skinning and Finishing: Secondary rollers or a separate Peeling Table ensure a high-yield, clean finish for premium markets. |
